Carrot Cake - cooking recipe

Ingredients
    1 1/2 c. oil
    2 c. sugar
    3 eggs
    2 tsp. vanilla
    2 c. flour
    2 tsp. cinnamon
    2 tsp. baking soda
    1 tsp. salt
    7 oz. flaked coconut
    2 c. shredded carrot
    1 (13 1/2 oz.) can crushed pineapple
    1 c. chopped nuts
    1/2 c. raisins
Preparation
    Drain juice from pineapple.
    In a large bowl, combine oil, sugar, eggs and vanilla.
    In another bowl, combine flour, cinnamon, baking soda and salt.
    Add dry ingredients to first mixture and mix well.
    Stir in coconut, shredded carrot, pineapple, nuts and raisins.
    Pour into a greased and floured 13 x 9 x 2-inch pan.
    Bake at 350\u00b0 for 50 to 60 minutes or until center of cake is firm to touch.
    Cool in pan.
    Frost as desired.
