Ingredients

2 Tbsp. oil, canola or olive
2 eggs, beaten
2 c. buttermilk
2 c. unbleached white flour
1 Tbsp. baking powder
1/2 tsp. salt
2 Tbsp. sugar
Preparation

Beat eggs, then add oil and buttermilk, mixing well.
Add the dry ingredients and just stir until mixed, but do not beat.
Have non-stick skillet heated to pancake temperature; pour about 1/4 cup batter onto skillet.
Let pancakes begin to bubble on top, and then turn over.
Serve with favorite syrup or preserves.
Makes 12 pancakes.
(Seven ingredients, thus the name.)
