Diabetic Breakfast Fruit Loaf - cooking recipe
Ingredients

1 1/4 c. cooked, pureed carrots
1/2 c. cooked, pureed prunes or applesauce
1 c. buttermilk
1/2 c. fat-free egg substitute or 2 Eggland eggs
1/2 c. Cary's diet maple syrup
1/4 c. oil
1/4 tsp. almond extract
1 tsp. baking powder
2 tsp. soda
1/2 tsp. ginger
3 c. flour
1 c. finely cut, dried apricots
1/2 c. chopped dates
1/2 c. raisins
1/2 c. nuts
Preparation

Combine and whisk together all liquid items.
Sift together all dry ingredients; combine. Fold apricots, dates,
raisins and nuts into mixture.
Bake in Bundt pan or loaf pan, greased with Pam and floured.
Bake at 350\u00b0 for about 40 to 50 minutes or until cleanly tested.
