Swedish Potato Salad - cooking recipe
Ingredients

2 lb. potatoes, cooked
1/4 c. cider vinegar
1 1/2 tsp. salt
1/8 tsp. pepper
3 Tbsp. chopped parsley
3/4 c. diced canned pickled beets, well drained
2/3 c. oil
Preparation

Place potatoes in a bowl.
Blend vinegar, oil, salt and pepper in a small bowl and pour over potatoes.
Chill several hours. Spoon potatoes into a salad bowl and sprinkle onion and parsley in the center of the potatoes.
Spoon beets in a ring around the onions and parsley.
Toss just before serving.
Serves 6 to 8.
