Latkes (Potato Pancakes) - cooking recipe

Ingredients
    2 lb. all-purpose potatoes, peeled, shredded and patted dry with paper towel
    1 large onion, minced
    3 Tbsp. flour
    2 eggs, lightly beaten
    1 1/4 tsp. salt
    1/4 tsp. baking powder
    salad oil for frying
Preparation
    In a medium bowl, combine all ingredients except oil.
    In a large skillet, heat 1/4 inch of oil over high heat.
    Drop
    potato mixture by level tablespoonfuls into hot skillet.
    Brown about 1 to 2 minutes per side.
    Keep warm.
    Repeat with remaining potato mixture.
    (Can be made ahead.
    Cool and refrigerate, covered, up to 24 hours.
    Reheat on cookie sheets in a preheated 400\u00b0 oven for 5 minutes.)
    Makes 36 servings.
