Eggplant Casserole - cooking recipe
Ingredients

1 eggplant
2 ribs celery, chopped
8 oz. tomatoes
1/2 tsp. garlic salt
1 1/2 c. cornbread crumbs
1 onion, chopped
1/4 c. butter
1 egg
1/2 tsp. salt
3/4 c. Cheddar cheese
Preparation

Pare and cube eggplant.
Cook until tender and drain well. Saute onion and celery in butter until soft.
Drain tomatoes and chop with eggplant.
Mix all ingredients except cheese.
Bake at 350\u00b0 for 30 to 40 minutes, until brown.
