Vegetable-Beef Soup - cooking recipe
Ingredients

1 tsp. oil
1/2 lb. beef stew meat, well trimmed
1 clove garlic, minced
1 large onion, chopped
2 carrots, julienned
3 medium potatoes, peeled and chopped
2 cans (16 oz. each) unsalted tomatoes
5 c. water
1/4 tsp. pepper
1/2 tsp. basil leaves
Preparation

Heat oil in frypan.
Add meat, garlic and onions.
Stir rapidly until brown.
Add carrots, potatoes, tomatoes, water, lite salt, pepper and basil.
Bring to boil.
Reduce heat, cover and simmer at least 2 hours.
Add water as needed.
Makes 12 cups.
