Peanutty Chicken And Vegetables - cooking recipe
Ingredients

2 Tbsp. olive oil
1 - 1 1/2 lb. boneless chicken breasts, cut up
1 tsp. paprika
2 medium onions, chopped
4 carrots, peeled and cut into pieces
1 zucchini, cut into pieces
1 red bell pepper, cut into pieces
1/3 c. peanut butter
1 c. chicken broth
salt & pepper
Preparation

In deep skillet, heat oil over medium - high heat.
Add chicken, sprinkle with paprika and cook till well browned.
Remove chicken and drain most of the drippings from skillet.
Add vegetables to skillet and cook, stirring, till somewhat tender. Stir in peanut butter, chicken broth, salt and pepper to taste. Heat to boiling, stirring until smooth.
Reduce heat and simmer 5 minutes.
Return chicken to pan and simmer a few minutes more until heated through.
Serve over hot, cooked rice and garnish with chopped peanuts, if desired.
Serves 4-5.
