Capitol Hill Bean Soup - cooking recipe

Ingredients
    1 1/2 c. dry peas (navy) beans
    7 c. boiling water
    1 small ham hock or ham chunks
    1 c. chopped onion
    1 c. finely chopped celery stalks and leaves
    2 Tbsp. chopped parsley
    1/2 garlic clove, finely chopped
    1/2 tsp. salt
    1/8 tsp. pepper
    1/2 bay leaf
Preparation
    Add beans to boiling water.
    Return to boil and boil 2 minutes.
    Remove from heat.
    Cover and soak overnight in refrigerator.
