Zucchini And Corn Salad - cooking recipe

Ingredients
    1 1/2 lb. zucchini, cut into 1/3 dice
    1/2 c. extra virgin olive oil
    1 (10 oz.) pkg. frozen corn, thawed and drained
    1/4 c. red wine vinegar
    1/4 c. minced scallions
    1/4 c. minced parsley
Preparation
    In a large heavy skillet heat olive oil until hot but not smoking.
    Add zucchini and saute, stirring constantly, for 3 minutes.
    Add corn and saute for 2 minutes.
    Add red wine vinegar and bring mixture to a boil, stirring constantly.
