Armadillo Eggs - cooking recipe
Ingredients

1/2 lb. Monterey Jack cheese, grated (room temperature)
1/2 lb. Monterey Jack jalapeno cheese, cut into pieces to fit into jalapenos
1/2 lb. hot sausage (room temperature)
1 1/2 c. Bisquick (dry)
1 large can whole jalapenos (tops cut off), seeded
grease (to deep-fry with)
Preparation

Mix together grated cheese, sausage and Bisquick. Knead until well mixed. Stuff jalapenos with jalapeno cheese. Roll out dough and cover each jalapeno. Deep-fry until golden brown.
