Spinach Stuffed Mushrooms - cooking recipe

8 large mushrooms
1 Tbsp. margarine
2 Tbsp. minced onions
1 c. well drained cooked spinach
1/2 c. cooked long grain rice
2 to 4 oz. shredded Mozzarella cheese
salt and pepper to tate
1/4 c. instant chicken broth
Preparation

In small skillet heat margarine until bubbly.
Chop up mushroom stems and onions, put in margarine until margarine is soaked up by onions and mushroom stems.
Add cooked spinach, rice, cheese (grated works best), salt and pepper.
Stir until cheese melts. Stuff large mushrooms.
Place mushrooms in pan and add broth to bottom of pan.
Cook 20 to 25 minutes at 400\u00b0.
