Suf-Soof (Mint And Parsley Salad) - cooking recipe

Ingredients
    1 c. fine bulgur (cracked wheat)
    1 c. minced onion
    1 1/2 c. chopped parsley
    1/4 c. mint
    1 c. chopped tomato
    1 c. fresh lemon juice
    1/4 c. olive oil
    salt and pepper to taste
Preparation
    Soak wheat in water for 1 hour.
    Drain; press out moisture. Mix with onion.
    Add parsley, mint, tomato, lemon juice, olive oil, salt and pepper.
