Cheddar Cheese Soup - cooking recipe
Ingredients

1 c. chopped onion
1 c. chopped celery
1/2 stick butter or margarine
1/4 c. flour
1/2 tsp. white pepper
1 1/2 c. water, heated with 1 can chicken broth (14 oz.)
1 1/2 c. milk
10 oz. Cheddar cheese, grated, or use Kraft jalapeno cheese
Preparation

In large saucepan, saute onion and celery in butter.
Add flour and pepper.
Toss to coat for 1 minute.
Slowly stir in chicken broth mixture, stirring constantly, until thickened and just comes to a boil.
Remove from heat; cool slightly.
In blender, puree up a little at a time until smooth.
Add milk and heat thoroughly.
Add cheese and heat, stirring constantly, until cheese is melted and soup is piping hot.
Makes approximately 6 servings.
