Red Beans With Ham And Rice - cooking recipe

Ingredients
    1 1/2 c. water
    1/2 cube beef bouillon cube
    3/4 c. rice (uncooked)
    1 small onion, chopped
    1 small bell pepper, chopped
    1/2 tsp. ground cumin
    1 (16 oz.) can red kidney beans
    2 1/2 oz. ham sliced sandwich, diced
    1 (8 oz.) can tomatoes, drained and chopped
Preparation
    Put water and bouillon cube in a 4-quart Dutch oven; bring to a boil over high heat.
    Stir in rice.
    When liquid boils again, stir in all remaining ingredients, except the tomatoes.
    Return mixture to a boil; reduce heat to low.
    Cover and simmer 35 minutes or until rice is tender and most of liquid is absorbed. Turn off heat.
    Add tomatoes and stir gently.
    Let stand covered for 5 minutes.
