Sweet Potato Pie - cooking recipe

Ingredients
    5 to 6 lb. sweet potatoes or yams
    2 sticks margarine
    1 can evaporated milk (more if needed)
    2 eggs, beaten
    2 c. sugar
    1/4 to 1/2 c. vanilla
    1 tsp. almond extract
Preparation
    Prepare pie shells; bake until light brown and set aside. Scrub sweet potatoes; boil in jackets approximately 30 minutes or until tender and drain.
    Splash in cold water; peel.
    In large mixing bowl, combine potatoes, margarine, milk, eggs, sugar, vanilla and almond extract.
    Beat with mixer until smooth texture. Pour in prepared shells.
    Bake at 350\u00b0 approximately 1 hour.
