Poached Salmon With Cucumber Sauce - cooking recipe

Ingredients
    4 salmon fillets (about 1 1/2 lb.)
    1 3/4 c. dry white wine
    1 c. yogurt
    1 cucumber, peeled, seeded and diced
    1 tsp. lemon juice
    1 tsp. fresh dill
    1 1/2 c. bottled clam juice or fish stock
    2 scallions, finely chopped
Preparation
    Stir together yogurt, scallions, cucumber, lemon juice and dill.
    Refrigerate.
