Orange Gingerbread Muffins - cooking recipe
Ingredients

2 1/4 c. flour
1/4 c. packed brown sugar
1 Tbsp. grated orange peel
1 1/2 tsp. baking soda
1/2 tsp. each: ground ginger and cinnamon
1/8 tsp. ground cloves
3/4 c. water
2 eggs, lightly beaten
1/4 c. dark molasses
1/4 c. each: margarine and whipped butter, melted and cooled
Preparation

Preheat oven to 375\u00b0.
In a large bowl, combine flour, sugar, orange peel, baking soda and spices; set aside.
In a small bowl, combine remaining ingredients.
Add to flour mixture; don't beat or overmix.
Combine only until moistened.
Spray 12 muffin cups with nonstick spray.
Fill 3/4 full.
Place muffin pan in center of oven and bake until toothpick comes out clean, 15 minutes.
Invert muffins on wire rack and cool.
Serves 12.
