Quesadilla Amigos(Guatemala) - cooking recipe

Ingredients
    8 flour tortillas, 6 inch size
    2/3 cup shredded Mexican cheese
    1/4 cup chipotle chile mayonnaise
    3 Tbsp. cilantro, chopped
    1/2 tsp. ground comino
    1/2 cup sliced black olives, drained
Preparation
    In a bowl, mix mayonnaise, cilantro and comino. Spread evenly over 4 tortillas. Sprinkle with cheese and olives. Place tortilla on top. Heat a 12 inch non-stick skillet to medium heat. Lightly spray with cooking spray. Cook quesadillas for 2-3 minutes or until starting to brown, turn over and cook 1-2 more minutes until lightly browned. Cut into small wedges and serve with salsa if desired.
