Pork And Apples - cooking recipe

Ingredients
    1 lb. pork loin, cut into strips (or use 8 link sausages, cut into chunks) about 1 lb.
    1 medium cooking apple, diced
    1 medium green pepper, cut into thin strips
    2 scallions, sliced
    2 Tbsp. margarine or butter
    1 c. water
    1/2 c. apple juice
    2 Tbsp. soy sauce
    1 Tbsp. vinegar
    3 Tbsp. brown sugar
    1/2 tsp. salt
    1 1/2 c. original Minute Rice
Preparation
    Cook and stir pork, apple, pepper and scallions in hot margarine in large skillet until browned.
    Add sugar, salt, water, apple juice, soy sauce and vinegar; bring to a boil.
    Reduce heat; cover and simmer for 10 minutes.
    Stir in rice; cover. Remove from heat; let stand 5 minutes.
    Makes 4 servings.
