Mrs. Lauritsen'S Shrimp Bites - cooking recipe
Ingredients

1 lb. shrimp, cooked and cleaned
1 c. parsley, chopped
1/2 c. bread crumbs
1 tsp. salt
1 egg
4 tsp. homemade or commercial mayonnaise
1/2 lb. thinly sliced bacon
Preparation

Chop shrimp and parsley in a food processor.
Remove to a medium bowl and add crumbs, salt, egg and mayonnaise.
Mix well and form into large marble sized balls.
Cut bacon slices into thirds.
Wrap each ball with bacon and secure with a wooden toothpick.
Place shrimp bites on a baking sheet and broil, turning once to cook bacon on both sides.
Serve hot.
Makes about 50.
