Marinated Mixed Vegetables - cooking recipe

Ingredients
    1 head cauliflower
    1 bunch broccoli
    1 large red onion
    1 red bell pepper
    3 carrots
    2 c. button mushrooms
    1 small jicama
    1/2 c. oil
    1 1/2 c. rice vinegar
    1/3 c. sugar
    1 Tbsp. salt
    3/4 tsp. oregano
    1 tsp. pepper
    2 tsp. garlic juice
Preparation
    Cut all vegetables into bite-size pieces (leave mushrooms whole, choose small ones).
    Blend remaining ingredients for marinade in a large container with cover.
    Add vegetables and refrigerate overnight, stirring gently occasionally.
    Keeps quite a while in the refrigerator, although the mushrooms will darken. Adapted from Ortho Pickle Book.
