Cranberry Pepper Roast - cooking recipe

Ingredients
    4 lb. beef tip roast
    2 Tbsp. cracked pepper
    3 Tbsp. salad oil
    2 2/3 c. cranberry cocktail/juice
    1 c. fresh cranberries
Preparation
    Score meat in a crisscross pattern.
    Rub sides only with pepper.
    Place in Dutch oven or roasting pan and brown over medium heat on all sides about 15 minutes.
    Pour cranberry juice over meat; add cranberries.
    Cover and cook in 325\u00b0 oven for 2 hours until tender.
    Place meat on warm platter; add a small amount of cornstarch to juice and cook until thickened.
    Makes 8 servings.
