Rainbow Divinity - cooking recipe

Ingredients

3 c. sugar
3/4 c. light corn syrup
1 pkg. flavored Jell-O (3 oz.)
1/2 c. coconut (optional)
3/4 c. water
2 egg whites
1 c. chopped nuts

Preparation

Mix sugar, water and corn syrup.
Cook to 265\u00b0 on candy thermometer.
Beat egg whites until frothy.
Gradually add dry Jell-O.
Beat until mixture holds peak.
Slowly add hot syrup while continuing to beat.
Beat until candy loses its gloss.
Stir in nuts and coconut.
Drop into small mounds on foil.
