Zucchini Pickles - cooking recipe

Ingredients
    4 quarts zucchini chunks
    6 onions, sliced
    2 green peppers, sliced
    2 cloves garlic or 1/2 tsp. garlic salt
    5 c. sugar
    1 1/2 tsp. turmeric
    2 Tbsp. mustard seed
    6 c. cider vinegar
    1/4 c. chili peppers, use 1/4 liquid (optional)
    1/3 c. salt
Preparation
    Do not peel zucchini, wash and cut and remove seeds.
    Add onion, pepper, garlic and salt.
    Cover with cracked ice.
    Mix and stand 3 hours.
    Drain.
    Combine vinegar, spices, sugar, chilies and liquid.
    Heat to boil.
    Add zucchini and reheat to boil.
    Lower heat and simmer briefly.
    Process.
    Makes 10 pints plus.
