Scalloped Corn - cooking recipe
Ingredients

2 (14 3/4 oz.) cans cream-style corn
2 eggs, beaten
1 c. crushed butter flavored crackers (about 20 crackers)
1 c. diced fresh or jarred mango or 1 c. diced fresh or frozen peaches, slightly sweetened
1/2 c. diced onion
1 tsp. sugar
1/2 tsp. salt
1/8 tsp. pepper
1 Tbsp. minced fresh parsley
Preparation

In a bowl, combine first 8 ingredients.
Transfer to a greased shallow 2-quart baking dish.
Sprinkle with parsley.
Bake, uncovered, at 350\u00b0 for 40 to 45 minutes or until golden brown. Makes 6 servings.
