Country Captain Chicken - cooking recipe
Ingredients

1/4 c. flour
1 1/2 tsp. salt
1 fryer chicken, disjointed
1/4 c. Wesson oil
1 onion, chopped
1 green pepper, sliced
1 clove garlic, minced
1 (8 oz.) can tomato sauce
2 c. water
1/4 tsp. Tabasco sauce
1 tsp. curry powder
1/4 c. currants or raisins
2 Tbsp. slivered almonds
Preparation

Flour and salt chicken.
Brown in oil.
Remove.
Add onion, green pepper and garlic.
Cook 3 minutes. Blend in tomato sauce, water, seasonings and currants. Mix well.
Replace chicken.
Cover and simmer for 30 minutes. Garnish with almonds.
Yields 4 to 6 servings.
