Chinese Shrimp And Rice - cooking recipe

Ingredients
    2 Tbsp. oil
    2 Tbsp. chopped onion
    1 c. diced shrimp
    1 1/3 c. Minute rice
    2 eggs, scrambled in small pieces
    1 c. chicken broth
    1 (3 oz.) can mushrooms
    1 c. cooked peas
    1 tsp. soy sauce
Preparation
    Heat oil in skillet.
    Saute onion, shrimp and rice until shrimp are pink.
    Remove from heat; stir in eggs.
    Bring broth, mushrooms with liquid, peas and soy sauce to a boil.
    Stir in rice mixture; cover.
    Let stand 5 minutes.
    Stir before serving.
    Makes 4 servings.
