Peterson Potatoes - cooking recipe

Ingredients
    1 onion
    5 to 6 baking potatoes
    1 bunch fresh broccoli
    1/3 c. olive oil
    1/3 c. fresh Parmesan cheese, grated
    black pepper, coarsely ground
Preparation
    Parboil potatoes and broccoli.
    Cut both into bite-sized pieces.
    Cut onion into large chunks.
    Place 1/2 of these ingredients in casserole and cover with 1/2 of olive oil.
    Add remaining 1/2 of vegetables, cover with remaining oil and season liberally.
    Sprinkle cheese on top.
    Bake 30 minutes at 400\u00b0.
