Cinnamon Red Hot Pickles - cooking recipe

Ingredients
    8 lb. cucumbers (use the large ones that we usually toss out)
    1 c. lime
    1 bottle red food coloring (small)
    2 c. apple cider vinegar
    1 (15 oz.) pkg. cinnamon Red Hot candies
    1 c. vinegar
    1 Tbsp. alum
    8 cinnamon sticks
    8 c. sugar
Preparation
    Peel and seed cucumbers.
    Slice 1/4-inch thick or cut in strips.
    Soak in 1 cup lime and 1 gallon water for 24 hours.
    Wash. Soak in ice water for 3 hours.
    Drain.
    Mix 1 cup vinegar, food coloring and alum with enough water to cover.
    Pour over cucumbers and simmer for 2 hours.
    Pour off.\tBring to boil 2 cups vinegar, 2 cups water, sugar, cinnamon sticks and Red Hot candy.
    Boil until candy is melted.
    Pour over cucumbers and let stand 24 hours. After 24 hours, pour the liquid into a boiler and bring to a boil. Pack cucumbers into jars.
    Pour hot mixture over and seal.
