Spinach Salad With Hearts Of Palm - cooking recipe
Ingredients

3 Tbsp. red wine vinegar
2 tsp. Dijon mustard
1 tsp. sugar
1/3 c. olive oil
2 lb. fresh spinach, stems trimmed
1 (14 oz.) can hearts of palm, drained and sliced
1 1/2 tsp. grated lemon peel
Preparation

Whisk first 3 ingredients in small bowl; gradually whisk in oil.
Season to taste with salt and pepper.
Cover and let stand at room temperature.
Combine spinach, hearts of palm and lemon peel in bowl.
Add enough dressing to season to taste and toss gently.
