Green Beans Mediterranean Style - cooking recipe
Ingredients

1 lb. fresh green beans
1 large onion, chopped
4 Tbsp. olive oil or salad oil
1/2 green pepper, seeded and chopped
1 stalk celery, chopped
1/2 c. water
Preparation

Wash the beans, then trim and cut in 2-inch lengths.
In a wide frying pan, cook onion in oil over high heat, stirring until onion is soft but not brown.
Add green pepper and celery; cook over moderate heat, covered, for 5 minutes, stirring occasionally. Add the beans to the cooking vegetables with the water; continue to cook, covered, over moderate heat for 20 minutes, stirring occasionally.
