Make Ahead Holiday Mashed Potatoes - cooking recipe

12 medium potatoes
1 (8 oz.) cream cheese
1/4 c. butter or margarine
1/2 c. sour cream
1/2 c. milk
2 eggs, slightly beaten
1 tsp. salt
1/4 c. chopped onion (optional)
Preparation

Cook and mash potatoes; add cream cheese in small pieces and then the butter; beat well.
Add sour cream.
To the milk, add the eggs and onion; add to the potatoes mixture.
Beat until light and fluffy.
Place in greased 9-inch casserole and refrigerate several hours or overnight.
Bake in preheated oven at 350\u00b0 for 45 minutes until lightly browned on top.
