Sausage Jambalaya - cooking recipe

Ingredients
    olive oil
    1/2 c. chopped onion
    1/2 c. chopped bell pepper
    1/2 c. chopped green onion
    1/4 c. chopped fresh parsley
    1 can tomato sauce
    3 tsp. minced fresh garlic
    1/4 tsp. dried mint (optional)
    1 c. white or red wine
    2 lb. smoked sausage (Polish, beef or lite)
    1 1/2 c. long grain rice
    2 tsp. salt
    1 Tbsp. Louisiana hot sauce or 1/4 tsp. red pepper
Preparation
    Saute onion, pepper and parsley in olive oil.
    Add tomato sauce, garlic, mint, wine, rice, salt, Louisiana hot sauce and sausage, cover 1/2 to 3/4-inch with water.
    Cover, simmer until water is almost all absorbed.
