Clam Fritters - cooking recipe

Ingredients
    12 hard clams (large Cherry Stone)
    1/4 tsp. pepper
    1/4 c. evaporated milk
    4 Tbsp. pancake mix or self-rising flour
    1 egg
    peanut or corn oil for grill
Preparation
    Place the clams and juice in blender or food processor.
    Blend clams until just minced (they should not be pureed).
    Pour minced clams into bowl; add pepper, evaporated milk, pancake mix and egg. Mix well.
    Heat frying pan to 375\u00b0 and grease lightly.
    For each fritter, scoop out 1 tablespoon of mixture into hot pan.
    When brown, turn and brown other side.
    Keep greasing pan as needed.
