Eggplant-Beef Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 lb. ground beef
    1 c. chopped onion
    16 oz. can tomatoes
    1 tsp. basil
    1 1/2 tsp. salt
    pepper
    1/4 tsp. garlic powder
    1 c. shredded Mozzarella cheese
    3 c. hot cooked rice
    grated Parmesan cheese
Preparation
    Peel and cook eggplant in salt water until tender; drain. Brown beef and onion.
    Stir in other ingredients.
    Sprinkle with Mozzarella cheese.
    Serve over hot rice sprinkled with Parmesan cheese.
