Microwave Corn Casserole - cooking recipe
Ingredients

1/2 c. corn muffin mix
1/4 c. cooking oil
2 Tbsp. diced pimiento (optional)
1 (16 1/2 oz.) can cream-style corn
2 eggs, beaten
1 tsp. garlic salt
1/2 c. (2 oz.) shredded Cheddar cheese
paprika
Preparation

Combine and mix together the muffin mix, oil, corn, eggs, garlic salt and pimiento.
(Omit the pimiento if your children are like mine and complain of bits of \"red\" in their corn.)
Pour into an ungreased, 8-inch, round microwave-safe dish.
Cover with plastic wrap.
