Ingredients

1 Tbsp. sugar
2 tsp. cornstarch
1/2 tsp. ground ginger
1 c. pineapple juice
1 1/2 c. fresh pineapple chunks
1 1/2 c. hulled fresh strawberries
1 c. fresh sliced peaches
1 c. fresh blueberries
fresh mint sprigs for garnish
Preparation

Combine first 3 ingredients and add pineapple juice gradually. Mix well until smooth.
Bring to a boil and boil for 1 minute, stirring constantly.
Cool.
Combine all fruit and toss with mixture gently until fruit is coated.
Refrigerate for up to 8 hours in covered container.
Spoon into serving dishes and garnish with fresh mint.
