Lamb, Red Beans And Tomatoes - cooking recipe

Ingredients
    1/2 to 1 lb. leftover roast lamb or broiled lamb from barbecue
    1 (27 oz.) can dark red beans or prepared dried beans
    3 c. canned, cut tomatoes
    3 tsp. chili powder or to taste
    salt to taste
    chopped onion
    chopped parsley
    minced garlic
Preparation
    Mix together the onion, parsley and garlic.
    Cut cooked lamb into small pieces.
    Brown meat in small amount of oil or in its own fat.
    Add onion mixture and saute 5 minutes.
    Add tomatoes, chili powder and salt (if needed); stir in beans.
    Simmer about 20 minutes.
    Very good with cornbread.
    Serves 4.
