Corn Bread Topped Ham Loaf - cooking recipe
Ingredients

2 beaten eggs
2/3 c. milk
1 c. soft bread crumbs
1/4 c. chopped onion
2 lb. ground fully cooked ham
1/2 c. apricot preserves
1 (8 oz.) pkg. corn muffin mix
Preparation

In bowl, combine beaten eggs and milk.
Stir in soft bread crumbs and onion.
Add ground ham.
Mix well.
Pat meat mixture into 12 x 7 1/2 x 2-inch baking dish.
Bake in 350\u00b0 oven for 30 minutes.
Remove meat loaf from oven; drain off any fat.
Spread apricot preserves over top of ham loaf.
Increase oven temperature to 400\u00b0.
Prepare corn muffin mix according to package directions. Pour over preserves covered ham loaf.
Bake in 400\u00b0 oven about 20 minutes more or until the corn bread layer is done.
Makes 8 servings.
