Light As Feather Muffins - cooking recipe

Ingredients
    1/4 c. shortening (part butter adds flavor)
    1/4 c. sugar
    1 egg, well beaten
    1 5/8 c. flour (1 1/2 c. plus 2 Tbsp.)
    4 tsp. double-acting baking powder
    3/4 tsp. salt
    1 c. milk
Preparation
    Cream shortening and sugar until fluffy.
    Blend in beaten egg. Sift together flour, baking powder and salt.
    Add to mixture, adding milk as you mix.
    Pour into well-greased muffin cups filling 2/3 full.
    Bake 18 to 20 minutes in quick moderate oven, 375\u00b0.
