Baked Bluefish New England Style - cooking recipe

Ingredients
    3 to 4 lb. dressed, whole bluefish
    salt and pepper
    2 c. bread crumbs
    1 medium onion, minced
    1 tsp. minced fresh herbs or poultry seasoning
    1/4 c. melted butter, milk or fish broth
    3 thin slices salt pork
    flour
Preparation
    Leave fish whole.
    Season inside and out.
    Mix crumbs, onion, herbs and butter, adding a little milk or fish broth if stuffing seems too dry.
    Stuff fish; secure with skewers or toothpicks. Slit skin of fish several times to prevent bursting.
    Lay 2 slices pork in heated baking pan.
    Place fish on top; dredge with flour. Cover with third pork slice and place in hot oven.
    Bake at 400\u00b0 for 8 to 10 minutes per pound.
    Baste as soon as fat runs and continue to baste every 8 to 10 minutes until done, which will be in about 3/4 hour.
