Sara Nell'S Blueberry Muffins - cooking recipe
Ingredients

1 egg
1/2 c. milk
1/4 c. corn oil or melted shortening
1 1/2 c. sifted flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. fresh or frozen blueberries, well drained
Preparation

Beat egg slightly with fork.
Stir in milk and corn oil.
Sift together and add flour, sugar, baking powder and salt.
Stir just until flour is moistened.
Batter should be lumpy.
Do not overmix.
Fill greased muffin cups, 2/3 full.
Bake 20 to 25 minutes in 400\u00b0 oven.
Yield: 12 medium muffins.
