Beef Or Deer Salami - cooking recipe
Ingredients

4 lb. ground meat
2 Tbsp. liquid smoke
1 tsp. garlic powder
1 1/2 tsp. black pepper
1 Tbsp. peppercorns
1/4 c. Morton Tender Quick salt
1/4 tsp. mustard seed
1/2 c. water
Preparation

Blend all ingredients in large bowl.
Divide in 3 equal logs 3-inches round.
Wrap in Saran Wrap; put in refrigerator for 24 hours, then unwrap.
Place on broiler pan in 325\u00b0 oven for 4 hours.
Keeps 3 weeks in refrigerator or 2 months in freezer.
