Cauliflower-Pasta-Chickpea Soup - cooking recipe

Ingredients
    2 Tbsp. olive oil
    2 c. potatoes, cubed
    1 large onion, cut into thin strips
    2 tsp. minced garlic
    3 c. cauliflower florets
    16 oz. can tomatoes, chopped
    8 oz. pasta (shells, bowties, etc.)
    1 c. chickpeas
    4 c. chicken broth
    4 c. water
    basil, oregano, salt and pepper to taste
Preparation
    Heat oil in 4-quart pot over medium heat.
    Add potatoes, onion and garlic.
    Cook 5 minutes.
    Add cauliflower and cook 2 minutes. Add water, broth, tomatoes, chickpeas and seasonings.
    Bring to a boil.
    Add pasta.
    Cover and simmer 15 minutes.
    Serves 6 to 8.
