Apricot Fritters - cooking recipe

Ingredients
    1 (29 oz.) can apricot halves, drained
    1 egg
    2/3 c. milk
    1 Tbsp. melted shortening
    1 c. all-purpose flour
    2 Tbsp. sugar
    1 tsp. baking powder
    1/4 tsp. salt
Preparation
    Dry apricot halves on paper toweling until as dry as possible. Beat egg with milk; stir in the melted shortening.
    Combine the flour, granulated sugar, baking powder and salt; add to egg mixture and stir just until mixed.
    Dip apricots in batter.
    Fry, a few at a time, in deep shortening, heated to 365\u00b0 until fritters are brown, about 4 minutes, turning once.
    Do not use the frying basket.
    Drain on paper toweling.
    Roll in confectioners sugar. Serve warm.
