Jalapeno Pepper Rice Casserole - cooking recipe

Ingredients
    1 stick oleo
    1 c. chopped celery
    1 c. chopped onion
    1 c. grated carrots
    1/2 c. chopped bell pepper
    1 or 2 chopped jalapeno peppers (depending how hot you would like it)
    salt to taste
    1 c. long grain rice (not cooked)
    1 can chicken consomme
    1 can water
Preparation
    Saute first 5 ingredients in oleo; add salt.
    Add rice, consomme and water to sauteed vegetables.
    Pour in casserole. Cover with foil and bake 1 hour at 350\u00b0.
    Serves 10.
