Funnel Cakes - cooking recipe

Ingredients
    2 eggs, beaten
    1 1/2 c. milk
    2 (6 oz.) envelopes Martha White Flapjax mix
    1 Tbsp. sugar
    1/2 tsp. vanilla extract
    oil (for deep frying)
    confectioners sugar to taste
Preparation
    Combine eggs, milk, Flapjax mix, sugar and vanilla in medium bowl; mix until smooth.
    Heat oil to 375\u00b0 in heavy skillet.
    Spoon 1/4 cup batter into funnel, holding finger over funnel opening. Release batter into hot oil in spiral, starting from center.
    Fry until golden brown on both sides; drain on paper towel.
    Repeat with remaining batter.
    Sprinkle generously with confectioners sugar.
    Serve warm.

    10 servings.
