Gourmet Potatoes - cooking recipe

6 medium potatoes
2 c. shredded Cheddar cheese (mild)
1/4 c. butter
1 1/2 c. sour cream (room temperature)
1/3 c. chopped onions
1 tsp. salt
1/4 tsp. pepper
1 Tbsp. butter
Preparation

Greens are best when young and tender.
Select those which are crisp, tender and have a bright color.
Allow about 2 pounds of greens to serve 4.
Wash greens several times and break off any tough stems.
Put bacon grease or cooking oil in a large pot with the greens.
Bring to a boil; reduce heat and simmer for about 1 hour.
Add salt and pepper.
The water that clings to the greens after washing them may be enough liquid.
If not, add a little more.
Using a sharp knife, chop the greens before serving.
