Cheese - Vegetable Soup - cooking recipe

Ingredients
    2 large potatoes, peeled and diced
    1 c. chopped onion
    1/2 c. finely chopped carrots
    1/2 c. finely chopped celery
    2 c. water
    1 tsp. salt, divided
    4 c. chicken broth
    1 c. half and half
    white pepper to taste
    3 c. shredded Cheddar cheese
Preparation
    Cover vegetables with water in a large saucepan.
    Add 1/2 teaspoon salt and bring to boil.
    Cover and simmer 15 minutes or until vegetables are tender; drain.
